¾ cup sugar
1 cup filtered water
1/8 tsp McCormick Mint Extract
white (clear) rum
750ml bottle or container, very clean and dry
To prepare mix: In a large microwave safe liquid measuring cup, heat water and sugar to a boil. Stir to add air into the mixture and microwave again until boiling. Stir and chill in a refrigerator until room temperature or cooler. Add Mint Extract. Pour sugar and mint mix into the 750ml container. Add rum to the 750ml container till full to 750ml. Cap and shake. Chill in a refrigerator until ready to serve. Makes approximately 750ml of drink mix or 1.5 liters of mojito when mixed with club soda.
To serve: Mix Jason Lopez’s Mojito Mix into a highball glass with club soda and ice, to taste. Garnish with sprig of mint if desired.
